Notes: Delicious flavor, tastes more like lean, red meat than poultry. Best preparation is medium rare so that meat is tender and not chewy. Place product in the back of the refrigerator where it is the coolest.
Description: These moulard duck breasts (magrets) are more flavorful and larger than regular duck breasts since they come from a duck that has produced foie gras.
Cooking/Serving Suggestions: Score the fat and marinate with olive oil, salt, pepper and Herbes de Provence or fresh herbs of your choice for several hours in the refrigerator. Preheat oven to 350˚. Heat an iron skillet and sauté skin side down for 4 minutes, draining excess fat if desired. Turn over and cook for another 4 minutes. Bake in preheated oven for 8 minutes, skin facing up. Take out of the oven and let sit for 8 minutes. Sauce: Green Peppercorn – heat heavy cream, salt, pepper, and green peppercorns together in a pan and spoon on top of magret.
